Babou Sankhal

Cracked millet semolina. It can be eaten as a dessert after dinner. Sankhal is very versatile and is also used in meat dishes or soups.

This dish is sweet and is usually eaten in the evenings, rarely in the morning. Gradually add the Sankhal to boiling water and let it boil for 20 minutes. Once it’s soft, add butter, a pinch of salt, sugar to taste, shredded coconut, nutmeg, and stir well.

It is then served in a deep bowl to which milk or yogurt is added, often combined with vanilla, orange blossom, and Carnation condensed milk.
