“Longevity” noodles are consumed during Chinese New Year, birthdays, and celebrations to symbolize the wish for a long life. Made with wheat flour, water, and salt (without egg), they are prepared with pork, chicken, Chinese chives, or mushrooms. Their length symbolizes life and should not be cut.
