El jesuita Bernab\u00e9 Cobo, que vivi\u00f3 en Cuzco en 1609, plasm\u00f3 en sus escritos que en la zona se com\u00eda el ma\u00edz tostado en &lsquo;kancha&rsquo;. As\u00ed se denomina a\u00fan a este tipo de ma\u00edz cuando se tuesta. <strong>BENEFICIOS NUTRICIONALES<\/strong> El <strong>maiz chulpe<\/strong> es una gran fuente de <strong>vitaminas A, B y E<\/strong>. Tambi\u00e9n es <strong>rico en minerales<\/strong> como <strong>manganeso, f\u00f3sforo, potasio, magnesio y zinc<\/strong>. <strong>PREPARACI\u00d3N<\/strong> El ma\u00edz chulpe se tuesta o fr\u00ede con poco aceite en una sart\u00e9n y se sirve cuando est\u00e1 crocante. Se le puede a\u00f1adir sal al gusto. <strong>PLATOS<\/strong> Se usa como guarnici\u00f3n y para acompa\u00f1ar al <strong>cebiche peruano<\/strong> y los <strong>chicharrones<\/strong>. En <strong>Ecuador<\/strong> se le conoce como <strong>ma\u00edz chulpi,<\/strong> que se tuesta en manteca de cerdo, se le a\u00f1ade ajo, cebolla y, algunas veces, chicharr\u00f3n.<\/p>\n","protected":false},"excerpt":{"rendered":"<p><strong>ORIGEN<\/strong><br \/>\nThis is a variety of corn native to the Andes.
